Inhabiting a 12th century building serving as buttress to the Palais des Papes, this restaurant benefits from an exceptional environment and a terrace overlooking the tourist hordes during the season. Christian Etienne, backed up by impeccable service, remains faithful to himself and to his Provençal menu. Well mastered Southern fundamentals are elevated by innovation and surprise. Each season, the region sings in the plate with menus that exalt a single product (asparagus, tomato, cepe, truffle). Variations on cabbage; rabbit leg upside down pie, surrounded by small pieces of turnip and onion fondu with juniper jus, fabulous; pan-fried cod with salsify and golden angel hair with poutargue slices; Wagyu beef braised with red wine... produce sensual savors, subtle alliances. To finish, some sweet follies around chocolate. The 750-reference wine card is an elegy to the region but brings in prestigious vintages from all over, and you are in good hands with the sommelier, Nicolas. Craftsmanship, passion, rigor in product selection... a sense of harmony.
