Le Petit Nice

Incontestably the best table in Marseille. The most upscale, too, in a 19th century villa set on a rocky spur overhanging the tides. Luxurious decor, completely redone last year, with a superb view of the sea. Gérald Passédat is one of Marseille's gastronomic stars. Beyond perfectionism, he cultivates simplicity and excels in classics of local cuisine which he supports with products from the back country. On the other hand, he is an innovator who brings complete liberty to the exercise. Flavors evolve in the plate, as with his Breton lobster with two crabs where the flavors progress exactly to produce a subtle rhythm between taste and texture. He has transformed his signature dish "Bouille-Abaisse," banishing all fats while leaving the sense of enjoying the best of the sea, thanks to his reductions using rare fish very delicately worked. Often two flavors will compete until they finally come together. Even the desserts are full of surprises. Very courteous welcome and heavenly service reinforce the attractiveness of Le Petit Nice. The wine card is princely, as is the selection of 120 champagnes. Sticker shock - menus have risen by 20 EUR this year ("only" 10 EUR on the lunch menu).
