Now longer a novelty but always good news, Laurent Chauviat's restaurant below the Saint Agricole church continues to go to the essential. Fundamental products take center stage and garnishes and seasoning are given supporting roles. Avocado mousseline and crab claw remoulade; rabbit baked with eggplant confit; roasted cod with tomato confit and fresh coriander, Arborio risotto; poultry supreme with pleurote mushrooms and sauce suprème; crushed potatoes with olive oil; panna cotta with pistachio; strawberries in their jus and white cheese sorbet... are limpid and bracing in their simplicity. The prices, too, are restrained with a first menu at 29 Euros - true happiness. The wine card restricts itself to the region and provides a wonderful selection by the glass from 5 Euros. Like the cuisine, the setting is pure lines, clarity, touches of vibrant color. The tartine bar has been removed and a second dining room of 25 places has been added. Dominique Chouviat manages the warm welcome and the attentive service. |
