A few paces from the Place Massena, the old "Rolando" has been transformed by Laurence and David Vaqué into an elegant, contemporary restaurant with pastel tones and a large window opening onto the terrace. The Vaqués worked at Les Viviers - David as second to Jacques Rolancy, Laurence managing the dining room. There is regional spirit and refined departure, the spirit of the season, a collection of good risottos (with roasted lobster, summer truffles, or "al verde", basil pulp and Parmesan), and an excellent lunch formula. The cuisine is Mediterranean and market-based: calamari; stuffed daurade royale cooked with sage; locally caught sar filet, zucchini and tomato; crusty lamb and roasted vegetables; roasted pear with spiced caramel and vanilla ice cream.... The cuisine is fresh and market-based, the feminine welcome is delightful, and there is now more space, with a private dining room that's great for business lunches.
