Each year this establishment is embellished and "provincializes" subtly, now with renovation of a 18th century sheepfold which will be rented in season with hotel service. Beautiful view, perched village, hotel surrounded by a four-hectare park, centennial olive trees and natural environment... La Bastide lives in the open air of the High Var. In the Aups countryside - therefore truffle country - the cooking is not in search of adventure. Marc Crendal, at the stoves for a year now, has a mission to bring - slowly but surely - a "slow food" spirit to the Bastide. Saint-Jacques pan-fried with summer truffle; veal kidney in white wine and linguine; lamb jowl; crème brulée with marrow or chocolate demonstrate a quality classicism while awaiting the promised paradise. Some Provence labels haunt the cellar. Pleasure: a summer dinner on the terrace with noble olive trees and a view of the Aups countryside. The vision captures this wise table.
