The multiplication of tables yields this result: Carlo Ferreira + Stéphane Biron + Jean Vaude = three childhood friends. No schoolbook nostalgia here but a small contemporary restaurant and trendy bistro with light, mirrors, daily specials on the chalkboard, and up-to-date ideas. Carlo Ferreira has distanced himself - not too much - from Cave de l'Origin, which was his first address just 50 meters from here. He celebrates the region's growers: fish from Gilles Deloye, "forgotten" vegetables from Pierre Magnani (see "The Southern Pantry"), meats from Cécile Bianchi, Mercantour lamb and Ardèche poultry... you get the picture. A perfect supply depot for fragrant, reassuring dishes. Freshwater shrimp, poached quail eggs, and saffron chantilly; a gazpacho fantasy withi beetroot, fresh goat cheese slab, hazelnut oil, and coriander; crunchy pork slice in marrow crust; turbot à la plancha; carambar crème brulée, baked apple or "Mojitobaba" (rum baba and mojito ice cream)... match Carlo's edgy, convivial spirit. Nice wine, and very affordable at around 30 €.
