Hostellerie Le Baou (restaurant La Terrasse)  

This beautiful hotel on the hill offers a view on the forest, the plain, and the Pampelonne beaches, each room being gifted with a terrace. In the windowed dining room and on the terrace we sample (dinner only) the classic cuisine of Daniel Speller, one of the well-known chefs of the Alp'Azur group. We appreciate his expertise on a flavorful, but not truly evolving, carte: pan-fried scampi, turbot en cocotte, ratatouille jus with shellfish; lamb in herb crust; raspberry crunch. Flavor, rigor, and a choice of local vintages combine with an escapist atmosphere far from the hordes and well-managed service.
