Only a single letter now, to capture the lounge spirit (evenings) and sunny offerings (noon, tartars, pâtés, grilled fish...). Vincent Maillard, who watches over the cooking at Spoon also supervises here. There's charm in the evening, around the pool, Southern style with devilish, tiny dishes: chickpea churros; langoustine nems with fennel; pan-fried foie gras with red tuna and ginger; lemon-meringue pie with basil... and neighboring domains in the cellar. Farewell to yesterday's gastronomic feasts; it's a new gourmet life, in tune with the times, for Byblos. Evenings another star makes the scene: Les Caves du Roy.
