Large ocre home, bougainvillea, terrace with eucalyptus, beaches reminiscent of the Caribbean... the Mas is a romanesque setting and a chic refuge, unique on the Côte d'Azur. Under the direction of Salvadore Troia it is peacefully evolving, gaining space, setting up new suites, and expressing charm rather than luxury. Joël Guillet has been here going on 20 years now, happily living on the west end of the island, and is one of few chefs to comprehend the setting. We still find curiosity and ardor for the work. Cod brandade and cuttlefish; olive cannolli stuffed with vegetables and ricotta; grilled turbot; oyster ravioli in rice pastry; crusty lamb with tajine spices; small vegetables, dried fruit, and lemon confit... Christophe Rouquette's light desserts illustrate versions of the South distinctly different from a regurgitated Provence. This lively, precise cooking is suitable to the spirit of the place, and the wine card opens to other worlds. Provence and Porquerolles domains join the party, as do some good Corsican vintages. For the rest, you know the story: nature, pine trees, absolute peace, beaches, get-away atmosphere... We forget about the fiery tabs and snub the recession. |
