Yogi is first of all an idyllic water garden and serene environment. For the experts, chef Uto is inspired by the gastronomy of the island of Kyushu and the new Shunju cuisine, reinterpreted with local ingredients. The marriage functions fabulously: shrimp beignets with urchin sauce; raw beef with citronella sauce; grilled rougets in tomato-garlic-ginger sauce; herring eggs and miso cream.... Beyond the inevitable (and delicious) sushi platters, crafted live by two knife artists and the fondus with seafood and meat, the new carte extends to raiseki cuisine, composed of a succession of small, typical dishes. Efficient and discreet service in kimono dress; exquisite politesse, of course; and a refined decor with waterfall, promenade, and garden. Radical change on the terrace with the addition of large wooden tables for 6 to 10 people. One of the best Asian addresses in Aix and beyond. |
