Modernization - to meet the demands of the clientele - has been the watchword after Thierry Bernard took over the management. For many years Franck Parys matched the house spirit with Provence-inspired dishes irrigated by crus from an exceptional wine cellar featuring the Rhone valley, above all Gigondas. The arrival of a new chef was announced this spring but the numerous faithful customers should be reassured. The changeover will be made slowly and the table should retain the Provençal soul so suitable to it. |
