Villa Belrose  

The grand villa perched on the hilltop - managed by Robert Van Straaten - offers a magnificent view of Saint-Tropez, the gulf, and the Esterel. Here, in one of the grand decors of the Tropezian countryside, Thierry Thiercelin cares for the (Mediterranean) house gastronomy and has long since taken the measure of his location. He grew up around here, and he has not been resting on his laurels. First good products, next style that beautifully dresses regional dishes. Chilled vegetable bourride; roasted royal langoustine with lemongrass chatting with its ratatouille; remarkable stuffed Mediterranean capon; farm rabbit tournados; pancetta, carrots, and creamed anchovies... or fresh dessert: roasted white peach with mint leaves; wild strawberries and mint sauce. Here, a trace of dietetic cooking; there, a variation around chocolate; nowhere an evaporated modernism - just a classic tone and care for the product. A vast wine cellar hosts grand crus and a good selection of Provence labels. On the extraterrestrial terrace, between courses of imaginative cooking, the sea to mountain horizon is all for you.
